Pithas for tea!


In Assam, a favourite tea-time snack is, pitha. The taste
is sweet and melts into your mouth. The ingredients are--
rice powder or flour, sugar or jaggery, depending on the
type you're making. For the ones in the picture, I used--
One small coconut, grated
Two cups rice flour
One cup sugar
One third of a tsp baking powder
A pinch of salt
Water to mix
Oil to fry
In a bowl, add all the ingredients but not the water. Mix
with hands thoroughly. Now add very little water.The con-
sistency should be such, that the dough can be shaped into
round pithas.
Heat oil. When it becomes really hot, reduce the flame and
start frying in batches. They need to be turned just once,
when the colour turns golden brown. Drain on kitchen paper.
Your tea-time snack is ready!
The same mixture can be used for steamed pithas. For this,
more water should be added but the mixture must not be
runny.The mixture can be put into idli moulds and steamed
till done.

Hi Kanak, here I am again wandered over to your other blog. I like poetry and cooking or vice versa what's more important at the moment. Copied your recipe for pithas. I will make them when my grand daughters come over, they love baking and cooking. Today it is raining and my washing is getting wet again because I didn't take it off the line yesterday...these days blogging seems mor important!LOL, have a nice day.

Thanks Kanak. This is what my kids are going to get for tea today. Lot of rice flour and even more coconuts at home.
This sounds so much more interesting than plain old idlis. Its so funny that at kids parties mine are busy eating pav-bhaji and bhel-puri while the north Indian kids are hogging idlis!
The pithas should be an interesting diversion for them.

Left my washing out too because there was no space left to hang the lot inside the house. And of course I didn't want to move away from the computer!

Kelli, thanks. I tried to replicate the bird-nest display and had fun doing it. Not as pretty as yours but it gave me enough food for more creativity!
